Recipes: Fennel Cilantro & Mint Dressing 🍃

Makes 1 1/2 cups

Ingredients:

  • 1 medium fennel bulb

  • 5 tablespoons olive oil

  • 3 tablespoons freshly squeezed lime juice

  • ¼ cup raw cashews or 2 tablespoons raw cashew butter

  • One 3 inch piece scallion, white and light green parts only, coarsely chopped

  • One ½ inch slice of large garlic clove

  • ¾ teaspoon sea salt

  • 1 teaspoon nutritional yeast

  • ½ teaspoon tamari

  • 1 ½ cups cilantro leaves

  • ½ cup fresh mint leaves

Directions: 

Remove any tough outer layers from the fennel, then halve, core and dice. You should have 1 ½ cups. Transfer the fennel to a high-powered blender, add the olive oil, lime juice, cashews, scallion, garlic, cilantro, mint, salt, nutritional yeast, and tamari and blend until completely smooth. This dressing is quite thick and creamy but you can thin it out with a little water if desired. Use immediately or store in a glass jar in the fridge for up to 3 days. Shake well before using.
